Ingredients

  • 4 medium ripe tomatoes
  • 0.5 medium red onion
  • 0.25 cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 small fresh jalapeño pepper
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 small garlic cloves

Directions

Step 1

Start by rinsing the tomatoes, then dice them into small pieces, removing any excess seeds.

Step 2

Finely chop half a medium red onion and add it to a medium bowl with the tomatoes.

Step 3

Roughly chop fresh cilantro and add 1/4 cup to the bowl with tomatoes and onions.

Step 4

Cut the small jalapeño pepper in half, remove seeds and finely chop. Add to the bowl. Handle with care to avoid irritation.

Peel and mince the garlic cloves, then add them to the bowl.

Drizzle 2 tablespoons of fresh lime juice and 1 tablespoon of extra virgin olive oil over the mixture.
