Ingredients

  • 1 medium whole (about 3 cups diced) fresh pineapple
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 1 small jalapeño pepper
  • 0.5 cup fresh cilantro leaves
  • 1 medium lime
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cut off the top and bottom of the pineapple, then stand it upright. Slice off the outer skin, then carefully cut out any remaining 'eyes'. Cut the pineapple into quarters lengthwise and remove the core. Dice the flesh into small, bite-sized pieces and place in a large bowl.

Step 2

Wash the red bell pepper and chop it into small pieces, about the same size as the pineapple chunks. Add the chopped pepper to the bowl with the pineapple.

Peel and finely dice the red onion, then add to the bowl.
