Start by gently rinsing the fresh mint leaves to remove any dirt. Pat dry with a clean towel.
In a medium saucepan, combine the coconut milk and mint leaves. Warm the mixture over medium heat until it begins to simmer. Do not let it boil.
Once simmering, remove the saucepan from the heat and cover it. Let the mint leaves steep in the coconut milk for about 30 minutes to infuse the flavor.
