Ingredients

  • 2 cups Full-fat coconut milk
  • 1 cup Fresh mint leaves
  • 0.5 cup Raw honey
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 0.25 teaspoon Almond extract (optional)
  • 0.5 cup Chopped dark chocolate (min 70% cacao, paleo-friendly)

Directions

Step 1

Start by gently rinsing the fresh mint leaves to remove any dirt. Pat dry with a clean towel.

Step 2

In a medium saucepan, combine the coconut milk and mint leaves. Warm the mixture over medium heat until it begins to simmer. Do not let it boil.

Step 3

Once simmering, remove the saucepan from the heat and cover it. Let the mint leaves steep in the coconut milk for about 30 minutes to infuse the flavor.

After 30 minutes, strain the coconut milk into a bowl using a fine mesh sieve to remove the mint leaves. Press on the leaves with the back of a spoon to extract as much flavor as possible.
