Ingredients

  • 2 cups fresh corn kernels
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 1 small jalapeño pepper
  • 1 cup cherry tomatoes
  • 0.25 cup fresh cilantro
  • 2 tablespoons lime juice
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Start by shucking the corn, removing all the husks and silks. Using a sharp knife, carefully slice the kernels off each cob. Measure out 2 cups of kernels and place them in a large mixing bowl.

Step 2

Dice the red bell pepper into small pieces, roughly the same size as the corn kernels, and add them to the bowl with the corn.

Step 3

Finely chop half a medium red onion and add it to the mixing bowl. This will add a nice, mild pungency to the salsa.

Carefully cut the jalapeño pepper in half, remove the seeds and ribs if you prefer less heat, and finely dice the flesh. Add the jalapeño to the bowl for a spicy kick.
