Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Arrowroot powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 0.5 cup Coconut milk
  • 1 tablespoon Honey
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Coconut oil

Directions

Step 1

In a medium-sized mixing bowl, combine the almond flour, arrowroot powder, baking soda, and salt. Whisk together until well combined and set aside.

Step 2

In another bowl, whisk together the eggs, coconut milk, honey, and vanilla extract until the mixture is smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix the batter.

Step 4

Heat a non-stick skillet or griddle over medium heat and grease it with a small amount of coconut oil.

Step 5

Pour 1/4 cup of the batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Step 6

Carefully flip and cook the other side for an additional 2 minutes or until golden brown.

Step 7

Transfer the cooked pancakes to a plate and repeat with the remaining batter, adding more coconut oil to the skillet as needed.

Step 8

Serve the pancakes warm. They can be topped with fresh berries, a drizzle of honey, or a sprinkle of nuts for extra flavor and texture.
