Ingredients

  • 1 head cauliflower
  • 3 tablespoons olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 1 large red bell pepper
  • 1 medium zucchini
  • 1 large carrot
  • 2 cups broccoli florets
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 0.25 cup fresh parsley
  • 1 medium lemon

Directions

Step 1

Begin by preparing the cauliflower rice. Cut the cauliflower head into small florets and place them in a food processor. Pulse the cauliflower until it reaches a rice-like consistency. If you don't have a food processor, you can use a grater to achieve similar results. Set aside.

Step 2

Peel and dice the onion. Peel and mince the garlic cloves. Set aside.

Step 3

Dice the red bell pepper, slice the zucchini, and cut the carrot into thin matchsticks. Set aside with the broccoli florets.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and garlic and sauté for 3-4 minutes until the onion becomes translucent.
