Ingredients

  • 4 pieces white fish fillets (such as cod or halibut)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons coconut oil
  • 2 tablespoons shallots, finely chopped
  • 3 cloves garlic, minced
  • 0.5 cup coconut cream
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons capers, drained

Directions

Step 1

Pat the fish fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Once hot, add the fish fillets in a single layer. Cook for about 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove the fish from the skillet and keep warm on a plate.

Step 3

In the same skillet, add the remaining tablespoon of coconut oil. Reduce the heat to medium-low and add the chopped shallots and minced garlic. Sauté for 2-3 minutes until the shallots are translucent and fragrant.

Step 4

Add the coconut cream, stirring continuously until it's well incorporated and starts to simmer. Add the lemon juice, lemon zest, and capers, and stir to combine.

Step 5

Let the sauce simmer gently for 3-4 minutes to allow the flavors to meld, stirring occasionally to ensure it doesn't stick to the skillet.

Step 6

Return the fish fillets to the skillet and spoon the sauce over them. Allow them to warm in the sauce for a minute or two.

Step 7

Sprinkle fresh dill over the fish before serving.

Step 8

Serve the fish immediately, garnishing with extra lemon slices if desired.
