  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 lettuce leaves
  • 1 sliced tomato
  • 1 sliced cucumber

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, pulse the raw cashews until they form a coarse meal texture. Be careful not to over-process into a butter.

Peel the carrot and grate it using a box grater. Grate the zucchini as well, and use a clean cloth or paper towel to squeeze out excess moisture.
