  • 0.5 teaspoon onion powder
  • 1 large, sliced red bell pepper
  • 1 large, sliced green bell pepper
  • 1 medium, sliced yellow onion
  • 1 juice of lime
  • 1 ripe avocado
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash and slice the sweet potatoes into thin rounds, about 1/8 inch thick.

Step 3

Line a baking sheet with parchment paper and place the sweet potato slices in a single layer.

Step 4

Drizzle with 1 tablespoon of olive oil, and season with 1 teaspoon of sea salt and 1/2 teaspoon of black pepper.

Step 5

Bake in the oven for 20-25 minutes, flipping halfway through, until edges are crispy.

While sweet potatoes are baking, heat 1 tablespoon of olive oil in a skillet over medium heat.
