Ingredients

  • 6 large eggs
  • 0.5 cup coconut yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon dill, fresh and chopped
  • 2 tablespoons chives, chopped
  • 0.5 cup celery, finely chopped
  • 0.25 cup red onion, finely chopped
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt

Directions

Step 1

Place the eggs in a large saucepan and cover them with cold water.

Step 2

Bring the water to a boil over medium-high heat.

Step 3

Once boiling, remove the saucepan from heat and cover it with a lid. Let the eggs sit in the hot water for about 9-12 minutes.

Step 4

Immediately transfer the eggs to a bowl of ice water to cool for at least 5 minutes. This helps stop the cooking process and makes peeling easier.

Step 5

While the eggs are cooling, in a medium mixing bowl, combine the coconut yogurt, Dijon mustard, and lemon juice.

Step 6

Stir in the chopped dill, chives, celery, and red onion. Season the mixture with sea salt and black pepper. Mix well to combine.

Step 7

Once the eggs have cooled, peel and chop them into bite-sized pieces.

Step 8

Gently fold the chopped eggs into the yogurt mixture until they are well coated and evenly distributed.

Step 9

Adjust the seasoning if necessary, and serve the egg salad on its own or over a bed of greens.
