Ingredients

  • 12 large Egg whites
  • 1 cup Spinach
  • 1 medium Red bell pepper
  • 0.5 cup Mushrooms
  • 2 stalks Green onions
  • 0.5 cup Cherry tomatoes
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with olive oil or line with paper liners.

Step 2

Chop the spinach, red bell pepper, mushrooms, and green onions into small pieces. Halve the cherry tomatoes.

Step 3

In a large mixing bowl, pour the egg whites and add the chopped spinach, red bell pepper, mushrooms, green onions, and cherry tomatoes.

Step 4

Add the olive oil, salt, black pepper, and garlic powder to the bowl. Mix well until all ingredients are evenly distributed.
