  • 1 large sweet potato
  • 2 eggs
  • 2 tablespoons coconut oil

  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Rinse the large sweet potato under cool water and pat it dry. Slice it lengthwise into 3/4-inch thick slices. You can typically get 2-3 slices from a large potato.

Using a round cookie cutter or a knife, cut a circular hole (about 2 inches in diameter) in the center of each sweet potato slice. Save the cut-out pieces for another use, if desired.
