Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 0.5 cup arrowroot powder
  • 0.25 cup coconut flour
  • 0.5 cup coconut oil
  • 1 large egg
  • 0.25 cup unsweetened coconut milk
  • 3 tablespoons hot sauce (Paleo-friendly)
  • 2 tablespoons lime juice
  • 1 tablespoon raw honey
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 stalks green onions, sliced (for garnish)

Directions

Step 1

In a medium bowl, whisk together the egg and coconut milk until well combined.

Step 2

In another bowl, mix the arrowroot powder, coconut flour, salt, and pepper.

Step 3

Dip each shrimp into the egg mixture, then dredge in the flour mixture until well coated. Shake off any excess.

Step 4

Heat the coconut oil in a large skillet over medium-high heat.

Step 5

Once the oil is hot, add the shrimp in batches, making sure not to overcrowd the pan.

Step 6

Fry the shrimp for 2-3 minutes on each side or until golden brown and cooked through.

Step 7

Remove the shrimp from the skillet and place them on a paper towel-lined plate to drain off excess oil.

Step 8

In a small saucepan, combine the hot sauce, lime juice, honey, and minced garlic. Stir over medium heat until the sauce begins to simmer.

Step 9

Remove the sauce from the heat and pour it over the fried shrimp, tossing gently to coat the shrimp evenly.

Step 10

Transfer the shrimp to a serving platter and garnish with sliced green onions.

Step 11

Serve immediately and enjoy your Paleo Dynamite Shrimp!
