Ingredients

  • 1 cup almond flour

  • 3 eggs
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons coconut oil
  • 0.5 teaspoon ground cinnamon
  • 1 cup fresh fruit (e.g., berries, sliced bananas)
  • 0 optional, for serving maple syrup

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

In a large mixing bowl, whisk together the almond flour, coconut milk, eggs, honey, vanilla extract, baking soda, and salt until the batter is smooth and well combined.

Step 3

Place a cast-iron skillet or oven-safe frying pan over medium heat and add coconut oil.

Step 4

Once the coconut oil is melted and the pan is hot, pour the batter into the skillet. Allow the edges to firm up slightly, which should take about 1 to 2 minutes.

Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the pancake is puffed and golden brown.

Step 6

Carefully remove the skillet from the oven using oven mitts. The pancake will deflate slightly as it cools.

Step 7

Sprinkle ground cinnamon over the top of the Dutch pancake and add fresh fruit as desired.

Step 8

Serve warm with a drizzle of maple syrup if desired, and enjoy your paleo-friendly Dutch pancake!
