  • 16 pieces large shrimp, peeled and deveined, with tail on

  • 0.5 cup green bell pepper, finely diced

  • 0.25 cup almond flour
  • 1 tablespoon coconut aminos
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon paprika
  • 4 pieces lemon wedges, for serving

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Carefully butterfly the shrimp by slicing down the back from head to tail without cutting all the way through. Flatten them out slightly to prepare for stuffing.
