Ingredients

  • 400 ml coconut milk, full-fat
  • 200 grams cherry tomatoes, halved
  • 100 grams baby spinach
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 small fresh green chili, sliced (optional)

Directions

Step 1

Heat the coconut oil in a large pan over medium heat.

Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.
