Ingredients

  • 1.5 cups almond flour
  • 0.25 cup coconut flour
  • 0.5 cup coconut oil
  • 0.33 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2.5 cups coconut milk
  • 0.5 cup honey
  • 0.25 cup arrowroot flour
  • 1 tablespoon gelatin powder
  • 2 tablespoons water
  • 1 vanilla bean
  • 0.25 teaspoon sea salt

Directions

Step 1

Preheat the oven to 350°F (175°C) and line an 8x8 inch square baking dish with parchment paper.

Step 2

In a bowl, mix together almond flour, coconut flour, melted coconut oil, maple syrup, and vanilla extract until well combined.

Step 3

Press the dough evenly into the prepared baking dish to form the base. Bake for 12-15 minutes or until lightly golden. Remove from oven and let it cool completely.

For the custard, combine coconut milk and honey in a saucepan over medium heat. Stir until honey is dissolved.

In a small bowl, mix arrowroot flour with 1/4 cup of water to create a slurry.

Slice open the vanilla bean, scrape out the seeds and add them with the bean pod to the milk mixture. Whisk in the arrowroot slurry into the saucepan. Stir continuously until the mixture thickens.

In a separate bowl, combine gelatin powder with 2 tablespoons of water and let it bloom for a few minutes.

Once the custard is thick, remove from heat, stir in the gelatin mixture until fully dissolved. Remove the vanilla bean pod and season with a pinch of sea salt.

Refrigerate for at least 3 hours or until the custard is set and firm.
