Ingredients

  • 1 medium Zucchini
  • 1 medium Carrot
  • 0.5 medium Red bell pepper
  • 0.25 medium Red onion
  • 0.25 cup Coconut flour
  • 0.25 cup Almond flour
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Coconut oil

Directions

Step 1

Grate the zucchini and carrot using a box grater. Squeeze out excess moisture from the grated vegetables using a cheesecloth or clean kitchen towel.

Dice the red bell pepper and red onion finely.

Step 3

In a large mixing bowl, combine the zucchini, carrot, bell pepper, and onion.
