Ingredients

  • 1 pound Pork tenderloin
  • 1 cup Almond flour
  • 0.5 cup Tapioca starch
  • 2 large Eggs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Coconut oil
  • 1 medium Avocado
  • 1 tablespoon Lime juice
  • 2 tablespoons Cilantro
  • 2 cups Mixed greens
  • 4 pieces Grain-free buns

Directions

Step 1

Slice the pork tenderloin into 1/2-inch thick medallions.

Step 2

In a shallow bowl, combine almond flour, tapioca starch, garlic powder, onion powder, paprika, salt, and black pepper.

In another shallow bowl, beat the eggs.
