Ingredients

  • 2 large yellow onions
  • 0.5 cup coconut flour
  • 0.5 cup almond flour
  • 0.75 cup coconut milk
  • 1 large egg
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 1 as needed olive oil spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel the onions and slice them into thin rings about 1/4 inch thick. Separate the rings carefully and set aside.

Step 3

In a medium bowl, combine the coconut flour, almond flour, sea salt, black pepper, smoked paprika, and garlic powder. Mix well.

Step 4

In another bowl, whisk the egg with the coconut milk until well combined.

Step 5

Dip each onion ring into the coconut milk and egg mixture, ensuring it is well coated.

Step 6

Place the dipped onion ring into the flour mixture, turning to coat evenly. Shake off any excess flour.

Step 7

Lay the coated onion rings in a single layer on the prepared baking sheet. Make sure they do not overlap.

Step 8

Lightly spray the onion rings with olive oil spray to help them crisp up during baking.

Step 9

Bake in the preheated oven for about 25-30 minutes, turning once halfway through, until they are golden brown and crispy.

Step 10

Remove the onion crisps from the oven and let them cool slightly on a wire rack before serving.
