Ingredients

  • 2 large sweet potatoes
  • 3 tablespoons coconut oil
  • 1 medium yellow onion
  • 1 medium bell pepper (red or green)
  • 2 cloves garlic
  • 1 tablespoon fresh rosemary
  • 1 teaspoon fresh thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and dice the large sweet potatoes into 1/2-inch cubes for even cooking.

Step 2

Chop the medium yellow onion and medium bell pepper into small, uniform pieces.

Step 3

Mince the garlic cloves and finely chop the fresh rosemary.

Step 4

Heat 2 tablespoons of coconut oil in a large skillet over medium heat.

Step 5

Once the oil is hot, add the sweet potato cubes to the skillet and spread them out into a single layer. Allow them to cook undisturbed for about 5 minutes or until the bottoms begin to turn golden brown.

Step 6

Stir the sweet potatoes, then add the remaining 1 tablespoon of coconut oil, chopped onion, and bell pepper to the skillet.

Step 7

Cook for another 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and the onion and bell pepper are soft and starting to caramelize.

Step 8

Add the minced garlic, chopped rosemary, fresh thyme, sea salt, and black pepper to the skillet. Stir everything together, making sure the herbs and seasoning coat all the ingredients.

Step 9

Cook for an additional 2-3 minutes until the garlic is fragrant but not burned.

Step 10

Taste and adjust the seasoning if needed, then serve the crispy homefries hot as a delicious side for your paleo-friendly breakfast.
