Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Tapioca starch
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh parsley
  • 3 cloves Garlic

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Wash and peel the russet potatoes. Cut them into thin, even sticks about 1/4 inch thick, resembling classic French fries.

Step 3

Place the cut fries in a large bowl and soak them in cold water for at least 10 minutes. This step removes excess starch and helps in achieving crispier fries.

Step 4

Drain the potatoes and pat them dry with a clean towel to remove as much moisture as possible.

Step 5

In a large mixing bowl, toss the potato sticks with tapioca starch until evenly coated.

Step 6

Add garlic powder, onion powder, salt, and black pepper to the bowl. Toss again to ensure even seasoning.

Step 7

Drizzle with olive oil and mix well to coat the fries completely.

Step 8

Spread the fries in a single layer on the prepared baking sheet. Avoid overcrowding to allow even cooking.

Step 9

Bake in the preheated oven for 15 minutes. Remove the baking sheet and carefully flip the fries using a spatula.

Step 10

Return them to the oven and bake for an additional 15 minutes, or until golden brown and crispy.

Step 11

While the fries are baking, mince the garlic cloves finely and chop the fresh parsley.

Step 12

Once the fries are done, remove them from the oven and toss them immediately with minced garlic and parsley for a fresh aroma.

Step 13

Serve the garlic fries hot as a delicious side dish or snack.
