Ingredients

  • 1 pound white fish fillets (such as cod or haddock)
  • 1 whole lemon
  • 1 cup almond flour
  • 0.25 cup coconut flour
  • 2 large eggs
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.25 cup coconut oil or avocado oil

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Cut the white fish fillets into bite-sized pieces, about 1 to 1.5 inches each.

Step 3

Squeeze the juice of the lemon over the fish pieces and let them sit for 5 minutes while you prepare the coating.

Step 4

In a shallow bowl, mix together the almond flour, coconut flour, sea salt, black pepper, garlic powder, onion powder, and paprika.

Step 5

In another shallow bowl, beat the eggs until fully combined.

Step 6

Dip each piece of fish first in the egg mixture, allowing any excess to drip off, then coat it in the flour mixture, pressing lightly to adhere.

Step 7

Place each coated fish bite onto the prepared baking sheet.

Step 8

Once all the fish bites are coated, heat the coconut oil or avocado oil in a skillet over medium-high heat.

Step 9

Fry the fish bites in batches, ensuring not to overcrowd the pan, for about 2-3 minutes on each side or until golden and crispy.

Step 10

Once fried, transfer the fish bites back onto the baking sheet.

Step 11

Bake in the preheated oven for an additional 5 minutes to ensure the fish is cooked through and crisp.

Step 12

Remove from the oven and let them cool slightly before serving. Serve immediately with your favorite Paleo-friendly dipping sauce.
