Ingredients

  • 4 large sweet potatoes
  • 2 tablespoons coconut oil
  • 1 medium yellow onion

  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro
  • 1 medium lime

Directions

Step 1

Peel and dice the sweet potatoes into roughly 1-inch cubes. Set aside.

Chop the yellow onion and mince the garlic cloves.

In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
