Ingredients

  • 1 medium head Cauliflower
  • 1 large Egg
  • 0.5 cup Almond flour
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Garlic powder
  • 3 cups Fresh baby spinach
  • 0.5 cup Coconut cream
  • 3 tablespoons Nutritional yeast
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Onion powder

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Remove the leaves and core from the cauliflower, then chop into florets. Pulse the florets in a food processor until it resembles rice.

Step 3

Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for 4-5 minutes until tender.

Allow cauliflower to cool slightly, then place in a clean kitchen towel and squeeze out as much excess moisture as possible.

In a large bowl, combine the squeezed cauliflower, egg, almond flour, salt, and garlic powder. Mix until well combined.
