Ingredients

  • 1 cup roasted unsalted sunflower seed butter
  • 1 can (about 13.5 oz) canned full-fat coconut milk
  • 3 cups chicken or vegetable broth
  • 1 large sweet potato, peeled and diced
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook until it becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Step 4

Add the diced sweet potato to the pot and toss with the onions, garlic, and ginger for another 3 minutes.

Step 5

Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the sweet potato is tender.

Step 6

Use an immersion blender or transfer the soup in batches to a blender, and blend until smooth.

Step 7

Return the pureed soup to the pot over low heat, then stir in the sunflower seed butter and coconut milk until well incorporated.

Step 8

Season with paprika, cayenne pepper, sea salt, and black pepper. Adjust seasoning according to taste.

Step 9

Finally, stir in the lime juice.

Step 10

Serve hot, garnished with fresh cilantro, and enjoy your creamy Paleo 'peanut' soup!
