Ingredients

  • 800 grams parsnips
  • 1 medium onion
  • 3 garlic cloves
  • 750 ml chicken or vegetable broth
  • 200 ml coconut milk
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the parsnips and chop them into small chunks, approximately 1 to 2 inches each.

Step 2

Peel and finely chop the onion.

Step 3

Peel and mince the garlic cloves.

Step 4

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and cook for about 5 minutes, until translucent.

Add the minced garlic and cook for another 1 minute, until fragrant.

Add the chopped parsnips to the pot and stir to combine with the onions and garlic.
