Ingredients

  • 1 head cauliflower
  • 2 medium sweet potatoes
  • 3 large carrots
  • 2 tablespoons ghee
  • 1 cup coconut milk
  • 2 cloves garlic
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Begin by preparing the vegetables: remove the leaves and stem from the cauliflower head and cut it into florets. Peel the sweet potatoes and chop them into chunks. Peel and chop the carrots into similar-sized pieces.

Step 2

Mince the garlic cloves finely and set aside.

Step 3

In a large pot, bring water to a boil with a pinch of salt. Add the cauliflower florets, sweet potatoes, and carrots to the pot.

Step 4

Cook the vegetables for 20-25 minutes or until soft and easily pierced with a fork.

Step 5

Once cooked, drain the water using a colander and return the vegetables to the pot.

Step 6

Add the ghee to the hot vegetables and stir until melted. Then, add the coconut milk, minced garlic, and fresh thyme leaves.

Step 7

Using a potato masher or an immersion blender, mash the vegetables until they reach a smooth consistency.

Step 8

Season with salt and black pepper to taste, mixing thoroughly to ensure even seasoning throughout the mash.

Step 9

Transfer the creamy mashed vegetables to a serving bowl and serve warm as a delightful Paleo side dish.
