Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons coconut oil
  • 3 cloves garlic cloves
  • 1 cup coconut milk
  • 0.5 cup chicken broth
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 6 cups baby spinach
  • 0.25 cup fresh parsley

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

In a large skillet, heat the coconut oil over medium-high heat.

Add the chicken breasts to the skillet and cook for about 7-8 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
