Ingredients

  • 2 large ripe avocados
  • 1 cup fresh cilantro
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 large garlic clove
  • 1 tablespoon apple cider vinegar
  • 0.5 optional jalapeño
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.25 cup water

Directions

Step 1

Begin by preparing the avocados: cut them in half lengthwise, remove the pits, and scoop the flesh into a blender or food processor.

Step 2

Add the fresh cilantro to the blender. Make sure to use the leaves and tender stems for maximum flavor.

Step 3

Squeeze the juice from fresh limes to measure 3 tablespoons and add to the blender with the avocado and cilantro.

Step 4

Pour in the extra virgin olive oil and apple cider vinegar.

Step 5

Peel the garlic clove, cut it into smaller pieces, and add to the blender. If you prefer a spicier dressing, chop half a jalapeño and include it as well.

Step 6

Sprinkle in the ground cumin, sea salt, and black pepper.

Step 7

Add 1/4 cup of water to help achieve a smooth and creamy consistency.

Step 8

Blend all ingredients on high speed until the dressing is smooth and creamy. If the dressing is too thick for your liking, add additional water, one tablespoon at a time, blending to your desired consistency.

Step 9

Taste the dressing and adjust the seasoning as necessary, adding more salt, lime juice, or pepper to suit your taste.

Step 10

Transfer the dressing to a jar or airtight container and refrigerate until ready to use. It will stay fresh for up to 4 days in the refrigerator.
