Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Coconut oil
  • 3 cloves Garlic
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Fresh cilantro
  • 1 Lime

Directions

Step 1

Remove the leaves and stem from the cauliflower and cut it into large florets.

Step 2

In a food processor, pulse the cauliflower in batches until it resembles the texture of rice. Be careful not to over-process it.

Peel and mince the garlic cloves.

Heat the coconut oil in a large skillet over medium heat.
