Ingredients

  • 2 cups almond flour
  • 1 cup tapioca flour
  • 0.25 cup coconut flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon sea salt
  • 0.5 cup coconut milk
  • 0.33 cup honey
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 0.25 cup coconut oil (melted)
  • 2 tablespoons arrowroot starch
  • 2 cups coconut oil (for frying)
  • 0.25 cup almond butter
  • 0.25 cup maple syrup
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease two doughnut pans with coconut oil or line them with parchment paper.

Step 2

In a large bowl, combine the almond flour, tapioca flour, coconut flour, baking powder, and sea salt. Mix well to remove any clumps.

Step 3

In another bowl, whisk together the coconut milk, honey, vanilla extract, eggs, and melted coconut oil until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing until well combined and a dough forms.

Step 5

Divide the dough evenly among the doughnut pans, filling each mold about two-thirds full to allow for expansion as they bake.

Step 6

Bake in the preheated oven for 12 to 14 minutes or until they are golden brown and a toothpick inserted into the center comes out clean.

Step 7

While the doughnuts are baking, prepare the glaze by mixing the almond butter, maple syrup, arrowroot starch, and lemon juice in a small saucepan over low heat, stirring constantly until fully combined and slightly thickened.

Step 8

Once the doughnuts are done, remove them from the oven and allow them to cool for about 5 minutes in the pans before transferring them to a wire rack.

Step 9

In a large skillet or deep fryer, heat coconut oil for frying over medium heat.

Step 10

Once the doughnuts are cool enough to handle, fry each one in the hot coconut oil for about 1 minute on each side until crispy and golden. Transfer to a paper towel-lined plate to remove excess oil.

Step 11

Dip each doughnut into the prepared glaze and place them back on the wire rack to let the glaze set. Serve warm or at room temperature.
