Ingredients

  • 6 cups chicken broth
  • 2 cups cooked chicken breast, shredded

  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.75 cup almond flour
  • 0.25 cup coconut flour
  • 2 large eggs
  • 0.25 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder (gluten-free)
  • 1 teaspoon fresh thyme, chopped

Directions

Step 1

In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing for 2-3 minutes until fragrant.

Step 2

Add carrots and celery to the pot and continue to cook for another 5 minutes, stirring occasionally.

Step 3

Pour in the chicken broth and bring to a simmer. Add the shredded chicken, salt, pepper, and thyme, and let it simmer while you prepare the dumplings.
