  • 2 large, spiralized into noodles zucchini
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon, dried thyme
  • 1 whole bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and minced garlic to the pot. Sauté for about 5 minutes until the onions become translucent.

Add the carrot slices and chopped celery to the pot. Stir and cook for another 3 minutes.
