Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Tapioca flour
  • 1 cup Coconut sugar
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Sea salt
  • 3 large Eggs
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Strong brewed coffee, cooled
  • 1 teaspoon Cinnamon
  • 0.5 cup Chopped pecans
  • 1 cup Coconut cream
  • 1 tablespoon Honey

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together almond flour, tapioca flour, coconut sugar, baking soda, and sea salt.

Step 3

In another bowl, beat the eggs and then mix in melted coconut oil, vanilla extract, and cooled coffee.

Step 4

Combine the wet ingredients with the dry ingredients, stirring until fully integrated and a dough forms.

Turn the dough out onto a sheet of parchment paper. Place another sheet on top and roll it out into a rectangle about 1/4 inch thick.
