Ingredients

  • 2 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 tablespoons Arrowroot powder
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.25 cups Coconut oil
  • 3 large Eggs
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Instant coffee
  • 2 tablespoons Hot water
  • 0.25 cups Grass-fed butter
  • 2 tablespoons Coconut sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, arrowroot powder, baking soda, and salt.

Step 3

In another bowl, beat the eggs. Add in the melted coconut oil, maple syrup, and vanilla extract. Mix well.

Step 4

Add the wet ingredients to the dry ingredients and mix until a dough forms.

Step 5

Divide the dough into eight equal parts and shape each into a bun. Place the buns onto the prepared baking sheet.

Step 6

In a small bowl, dissolve the instant coffee in hot water. Set aside to cool slightly.

In a small saucepan, melt the grass-fed butter over low heat. Stir in the coconut sugar and the dissolved coffee until well combined.

Using a spoon, evenly spread the coffee mixture on top of each bun.
