Ingredients

  • 1 cup Fresh grated coconut
  • 2 tablespoons Roasted gram (Bhuna chana)
  • 1 inch Ginger, finely chopped
  • 2 small Green chilies
  • 6 leaves Curry leaves
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Himalayan pink salt
  • 0.5 cup Water
  • 1 tablespoon Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 small Dried red chili

Directions

Step 1

In a blender, combine fresh grated coconut, roasted gram, ginger, green chilies, lemon juice, and Himalayan pink salt.

Step 2

Add water to the blender and grind the mixture until smooth. Adjust the water quantity if needed to achieve a thick, creamy consistency.

Step 3

Transfer the blended chutney into a serving bowl.

Step 4

For tempering, heat coconut oil in a small pan over medium heat.

Step 5

Add mustard seeds to the hot oil and let them splutter.

Step 6

Add the dried red chili and curry leaves to the pan and sauté them for about 30 seconds until the curry leaves become crispy and aromatic.
