Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup almond flour
  • 0.5 cup coconut oil
  • 0.333 cup honey
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 0.25 cup coconut cream
  • 0.25 cup dark chocolate chips (optional, paleo-friendly)

Directions

Step 1

Line an 8x8 inch baking dish with parchment paper and set aside.

Step 2

In a medium-sized mixing bowl, combine unsweetened shredded coconut and almond flour.

Step 3

In a small saucepan over low heat, melt the coconut oil. Once melted, add honey, vanilla extract, and sea salt, stirring until fully combined.

Step 4

Pour the liquid mixture into the bowl with the shredded coconut and almond flour. Stir until everything is well incorporated.

Step 5

Add coconut cream to the mixture and mix again until the mixture is moist and can be pressed together.

Step 6

Transfer the mixture to the prepared baking dish and use a spatula to press it evenly across the base of the dish.

Step 7

If using dark chocolate chips, sprinkle them on top and gently press them into the coconut mixture.

Refrigerate the bars for at least 2 hours or until firm.

Once set, lift the bars out of the dish using the parchment paper and place them on a cutting board.
