Ingredients

  • 1 cup raw almonds
  • 1.5 cups unsweetened shredded coconut
  • 12 pieces medjool dates, pitted
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Directions

Step 1

Add the raw almonds to a high-speed food processor and pulse until they become a coarse meal. Be careful not to over-process into almond butter.

Step 2

Add the unsweetened shredded coconut, pitted medjool dates, coconut oil, vanilla extract, and sea salt to the processor with the almond meal.

Step 3

Process all ingredients together until the mixture starts to come together and the dates are evenly dispersed. The mixture should be sticky enough to hold together when pressed between your fingers.
