Ingredients

  • 120 ml Warm water
  • 15 ml Honey
  • 7 g Active dry yeast
  • 240 g Almond flour
  • 30 g Coconut flour
  • 60 g Tapioca starch
  • 5 g Salt
  • 2 large Eggs
  • 10 ml Apple cider vinegar
  • 30 ml Olive oil

Directions

Step 1

In a small bowl, combine the warm water and honey. Stir in the active dry yeast and let it sit for about 5 minutes until it becomes frothy.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, tapioca starch, and salt.

Step 3

In another bowl, beat the eggs and add apple cider vinegar and olive oil.

Step 4

Pour the frothy yeast mixture and the wet ingredients into the dry ingredients. Stir until well combined and a dough forms.

Step 5

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 6

Divide the dough into 8 equal parts and shape each into a ball. Place them on the prepared baking sheet.

Step 7

Cover the dough balls loosely with a clean kitchen towel and let them rise in a warm place for about 15 minutes.

Step 8

Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown and firm to the touch.
