Ingredients

  • 1 head iceberg lettuce
  • 4 slices bacon
  • 1 cup cherry tomatoes
  • 0.25 cup red onion
  • 2 tablespoons fresh chives
  • 0.75 cup raw cashews
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic
  • 0.5 cup water
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the raw cashews in a bowl and cover with boiling water. Let them soak for 20 minutes, then drain and rinse.

Step 2

While cashews are soaking, cook the bacon in a skillet over medium heat until crispy, about 4-5 minutes per side. Remove from the skillet and drain on a paper towel-lined plate. Once cool, crumble the bacon and set aside.

Halve the cherry tomatoes, and thinly slice the red onion. Set these aside for topping the salad.
