Ingredients

  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 garlic cloves
  • 3 medium carrots
  • 2 celery stalks
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon fresh thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 8 ounces mushrooms
  • 2 medium sweet potatoes

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes and season with some salt and pepper.

Step 2

Heat olive oil in a large Dutch oven over medium-high heat. Add beef cubes and brown on all sides, working in batches to avoid crowding the pan. Remove beef and set aside.

Step 3

Chop the onion, mince the garlic, and slice the carrots and celery.

Step 4

In the same pot, add the onion and garlic, cooking until softened, about 4 minutes.

Add carrot and celery slices and cook for another 3-4 minutes.

Stir in the tomato paste and cook for 1 minute.

Discard bay leaves. Adjust salt and pepper to taste before serving.
