Ingredients

  • 10 ounces grass-fed beef steak
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 2 cups spinach
  • 1 clove garlic

Directions

Step 1

Remove the steak from the refrigerator and let it come to room temperature, about 20 minutes before cooking.

Step 2

Season the steak generously on both sides with sea salt and black pepper.

Step 3

Heat 2 tablespoons of olive oil in a medium skillet over medium-high heat until shimmering.

Step 4

Place the steak in the hot skillet and sear for 3-4 minutes on each side for medium-rare, or longer for desired doneness.

Step 5

Remove the steak from the skillet and let it rest on a cutting board for 5 minutes before slicing.

Step 6

Meanwhile, in the same skillet, add the remaining tablespoon of olive oil.

Step 7

Crack two eggs into the skillet, keeping the yolks intact, and cook for 2-3 minutes or until the whites are set. This will produce sunny-side-up eggs.

Step 8

Transfer the cooked eggs to a plate and cover loosely to keep them warm.

Step 9

Finely mince the garlic clove.

Step 10

In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.

Step 11

Add the spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.

Step 12

Serve the sliced steak with the eggs and sautéed spinach on the side.
