Ingredients

  • 2 pounds Yellow squash
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 large Eggs
  • 1 cup Almond flour
  • 0.5 cup Coconut milk
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh thyme
  • 0.5 cup Pecan nuts

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Wash the yellow squash and slice them into thin rounds, approximately 1/4 inch thick.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Chop the onion and mince the garlic. Add to the skillet and sauté for about 3 minutes until the onion is translucent.

Step 5

Add the sliced squash to the skillet and cook for another 5-8 minutes, or until the squash is tender. Stir occasionally.

Step 6

Meanwhile, in a large mixing bowl, beat the eggs. Add almond flour, coconut milk, nutritional yeast, salt, black pepper, and fresh thyme. Mix until well combined.

Chop the pecan nuts coarsely and set them aside.
