Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 0.75 cup fresh lime juice
  • 0.25 cup fresh lemon juice
  • 0.5 cup red onion, finely chopped
  • 1 medium tomato, diced
  • 1 jalapeño, seeded and minced
  • 0.5 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 cucumber, peeled and diced

Directions

Step 1

Chop shrimp into bite-sized pieces, about 1/2-inch each, and place them in a large glass bowl.

Step 2

Pour the fresh lime juice and lemon juice over the shrimp. Make sure the shrimp are fully submerged. Cover the bowl with plastic wrap and refrigerate for 20-30 minutes until the shrimp turns opaque and 'cooked' in the citrus juice.

Step 3

While the shrimp is marinating, prepare the vegetables: chop the red onion, dice the tomato, seed and mince the jalapeño, and chop the cilantro.

Once the shrimp is ready, drain excess citrus juice, leaving about 1/4 cup of the liquid with the shrimp in the bowl.
