Ingredients

  • 2 pounds Large shrimp, deveined and peeled
  • 12 ounces Smoked sausage, Paleo-compliant, sliced
  • 1.5 pounds Baby red potatoes, halved
  • 4 ears Corn on the cob, cut into quarters
  • 1 large Yellow onion, quartered
  • 2 Lemon, halved
  • 6 Garlic cloves, smashed
  • 0.25 cup Old Bay seasoning
  • 1 teaspoon Cayenne pepper
  • 3 Bay leaves
  • 5 sprigs Fresh thyme
  • 2 tablespoons Salt
  • 15 Black peppercorns
  • 16 cups Water

Directions

Step 1

In a large pot, add 16 cups of water and bring it to a boil over high heat.

Step 2

Once the water is boiling, add the salt, Old Bay seasoning, cayenne pepper, bay leaves, fresh thyme, black peppercorns, garlic cloves, and onion. Stir well and let it boil for 5 minutes to allow the flavors to meld together.

Step 3

Add the baby red potatoes to the pot and reduce the heat to medium. Cover and let them cook for about 10-12 minutes, or until they are just tender when pierced with a fork.

Step 4

Next, add the corn and sausage slices to the pot. Cover and cook for an additional 5 minutes.

Step 5

Squeeze the juice of the lemons into the pot and then drop the lemon halves in as well.

Step 6

Finally, add the shrimp to the pot. Stir everything gently and cook for about 3-4 minutes, or until the shrimp are pink and opaque.

Step 7

Using a slotted spoon, carefully remove the shrimp, sausage, corn, and potatoes from the pot, allowing excess liquid to drain back into the pot.

Step 8

Serve the Paleo shrimp boil on a large platter or directly onto tables lined with parchment paper. Optionally, serve with additional lemon wedges and Paleo-compliant clarified butter for dipping.
