  • 2 pounds ground lamb
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 pounds cauliflower florets
  • 0.5 cup coconut milk
  • 2 tablespoons ghee

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add ground lamb and brown it, breaking it up with a spoon. Once browned, transfer the lamb to a bowl and set aside, discarding any excess fat.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the chopped onion, diced carrots, and diced celery until the vegetables are tender, around 6-8 minutes.

Add the minced garlic and tomato paste to the vegetables, stirring well for about 1 minute until fragrant.

Pour the lamb mixture into a baking dish, spreading it evenly. Top with the cauliflower mash, smoothing it with a spatula.

Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is slightly golden and bubbling.
