Ingredients

  • 4 large eggs
  • 2 tablespoons coconut milk
  • 1 tablespoon ghee
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped chives

Directions

Step 1

Crack the eggs into a medium-sized mixing bowl.

Step 2

Add the coconut milk, sea salt, and black pepper to the eggs.

Step 3

Whisk the mixture thoroughly until the eggs and coconut milk are fully combined and slightly frothy.

Step 4

Place a non-stick skillet over medium-low heat and add the ghee.

Step 5

Allow the ghee to melt completely and coat the bottom of the skillet evenly.

Step 6

Pour the egg mixture into the skillet.

Step 7

Let the eggs sit undisturbed for about 30 seconds to start setting.

Step 8

Using a rubber spatula, gently drag the outer edges into the center of the pan, allowing the uncooked eggs to flow out towards the edges.

Step 9

Continue to gently fold the eggs and push them towards the center every few seconds until they are mostly set but still slightly undercooked on top.

Step 10

Remove the skillet from the heat while the eggs are still slightly runny; they will continue to cook from the residual heat.

Step 11

Sprinkle the scrambled eggs with chopped chives before serving.

Step 12

Serve immediately, and enjoy your Paleo-friendly scramble.
