  • 1 cup cherry tomatoes
  • 1 medium bell pepper

  • 0.25 cups fresh basil leaves

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower has a rice-like texture.

Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4 minutes, until softened. Let it cool slightly.
