Ingredients

  • 12 pounds Whole turkey
  • 1 cup Olive oil
  • 1 whole Lemon
  • 3 sprigs Fresh rosemary
  • 3 sprigs Fresh thyme
  • 3 sprigs Fresh sage
  • 4 cloves Garlic cloves
  • 1 medium Onion
  • 2 tablespoons Sea salt
  • 1 tablespoon Black pepper
  • 2 cups Chicken broth

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes.

Step 3

Pat the turkey dry with paper towels, inside and out.

Step 4

Place the turkey on a rack in a large roasting pan.

Step 5

Rub the olive oil all over the turkey, ensuring it’s evenly coated.

Step 6

Cut the lemon into quarters and place inside the turkey cavity along with half of the garlic cloves.

Step 7

Add the rosemary, thyme, and sage sprigs to the cavity.

Step 8

Peel and quarter the onion, and scatter it around the turkey in the roasting pan.

Step 9

Mince the remaining garlic cloves and mix with sea salt and black pepper, then rub this mixture all over the turkey skin.

Step 10

Pour the chicken broth into the bottom of the roasting pan.

Step 11

Cover the turkey loosely with aluminum foil and roast in the preheated oven for about 2.5 to 3 hours or until the internal temperature reaches 165°F (74°C).

Step 12

Remove the foil during the last 30 minutes to allow the skin to brown and crisp up.

Step 13

Once fully cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
